Spinach and Bacon Quiche Recipe

I fell in love with quiches when I was going to law school and one of the members in my study group would cook them for us.  Missing this delicious dish I later found out how to make quiches myself.   Below is my recipe for a delicious spinach and bacon quiche that is made with bacon, spinach, egg, half and half, chives, Swiss cheese, cayenne and other seasonings.


Ingredients:

1 prepared frozen pie crust
1 pound of chopped smoked bacon
6 eggs
1/4 teaspoon of salt
1/8 teaspoon of white pepper
1/8 teaspoon of cayenne pepper
1/4 teaspoon of ground mustard
4 teaspoons of chopped chives
1 1/2 cups of half and half
1 (10 oz.) package frozen chopped spinach, thawed and well drained
1 1/2 cups of grated Swiss cheese

Instructions:

You will want to begin by preheating your oven to 375 degrees F.

Then line your pie crust with parchment paper and then fill it with dried beans. Bake until the crust is set.  This  should take 12 to 14 minutes.   Next, remove the paper and weights from your pie crust and then continue to bake until golden brown.  This should take 8 to 10 minutes.  Now, remove your pie crust from the oven and cool on a wire rack.  Leave your oven on but reduce the temperature to 350 degrees F

Now, take a skillet and place your chopped bacon into the skillet over a medium high heat.  When the bacon fat begins to render you will want to reduce your heat to medium and then cook your bacon until it is browned and your fat has rendered out.  You will want to place your cooked bacon on some paper towels to absorb the excess fat.

Then take a large mixing bowl and add in your eggs and whisk them together.  Now add in your salt, pepper, cayenne, ground mustard and chives and whisk a bit more.  Now add in your half and half and vigorously whisk your ingredients together  until its slightly frothy.

You should now take bacon, spinach and cheese and mix them into the bottom of your pie crust.  Then place your pie onto a baking sheet and then pour your egg mixture carefully into the pie crust.  You will need to move your bacon, spinach and cheese around as you pour your egg mixture into the pie crust to make certain that it gets mixed and fully incorporated into your cheese, spinach and bacon mixture.

Then, carefully place your baking sheet into your preheated oven and bake at 350 degrees F. until the egg mixture is set.  You have your pie on your baking sheet because it will most likely bubble over.  This should take 35 to 45 minutes to cook.  When finished remove and place on a wire rack and let it cool.
