Southern Collard Greens Recipe

Southerners truly love their greens.   Collard greens, kale, mustard greens, spinach and turnip greens are all greens and are an important staple in the Southern diet.  There is really no other vegetable that is so uniquely Southern.  Below is my recipe for making some traditional and very nice tasting Collard Greens that are made with collard greens. red onion, garlic, bacon, chicken broth, red pepper flakes, salt and pepper.


Ingredients:

1 tablespoon of olive oil
3 slices of bacon
1 red onion, chopped in half and then sliced
3 cloves of garlic, minced
3 cups of chicken broth
1 teaspoon of Kosher salt
1 teaspoon of black pepper
1/8 teaspoon of red pepper flakes
1 pound of fresh collard greens, with stems removed and cut into 2 inch pieces

Instructions:

To prepare your Collard Greens you will want to place your oil into a large heavy pot and then heat the oil over medium-high heat. When the oil is hot you should add your bacon, and cook the bacon until it is crisp.  When it is finished you should remove the bacon from pan, crumble it and then return to the pan and add in your onions and sauté your onions until they are tender but not brown.  This should take about 5 minutes.   Next add in your garlic to the pan and cook for about 1 minute.  You will then want to add  in your collard greens to your pot and sauté until your collard greens just begin to wilt.

At this point you should pour in your chicken broth, and then season with your salt, pepper, and red pepper flakes.   Bring your liquid to a boil and then reduce your heat to low, cover, and then simmer for about 45 minutes, until your collard greens are nice and tender.
