Chocolate Macaroons Recipe

One of my favorite cookies of all time is a Coconut Macaroon.  Simply put, I am coco nuts about Coconut Macaroons.  The only way to improve coconut macaroons would be to add in chocolate to the recipe, which is exactly what this recipe does.  Below is my easy to follow recipe for making some delicious Chocolate Macaroons that are made with semi sweet chocolate chips, egg whites, sugar, coconut,vanilla extract and almond extract.


Ingredients:

2 1/4 cups of semi sweet chocolate chips
3 large egg whites
1/8 teaspoon of salt
3/4 cup of sugar
2 2/3 cups (7 ounce bag) of flaked coconut
1/2 teaspoon of vanilla extract
1/2 teaspoon of almond extract

Instructions:

You will want to begin this recipe by melting your chocolate.  To melt your chocolate you should take a medium saucepan and fill it half way with water and place it over a medium high heat.  When it comes to a boil reduce your heat and let it come it to a simmer.  Then take a heat proof bowl and place your chocolate into it and place your bowl over your saucepan of simmering water.  The bottom of the bowl should be above the water, not touching it.  You will want to stir your chocolate with a spatula as it melts.  When melted set it aside to cool to room temperature.

Now take a medium mixing bowl and add in your egg whites and beat your egg whites until they are foamy.  Sprinkle in your salt as you beat your egg whites.  Then slowly add in your sugar as you beat your egg whites and continue to beat until stiff peaks form.   Then add in your coconut, chocolate, vanilla extract and almond extract and fold in until all of your ingredients are mixed together.  You want to fold your ingredients in gently but make certain that your chocolate fully coats your mixture.  Then cover your bowl and refrigerate until your mixture is firm.  This should take an hour.

Preheat your oven to 325 degrees F. before you remove your mixture from the refrigerator.

You now want to take two baking sheets and spray them with some cooking spray.  Then simply take a rounded teaspoon full of your chocolate macaroon batter and drop them on your baking sheets about 2 inches apart.  Then place your baking sheets into your preheated oven and bake until the bottoms of your chocolate macaroons are golden and the tops start to brown.  This should take 10 to 12 minutes.  Keep in  mind that you want the insides of your macaroons to be moist so do not over cook your chocolate macaroons.  When finishes cool your Chocolate Macaroons on a wire rack.  enjoy
