Southern Hush Puppies Recipe

Hush Puppies are deep fried dumplings of cornmeal that are traditionally served with fried catfish or other deep fried seafood.  They are especially popular throughout the South and it is said they came about when cooks made them out of the same cornmeal that they used to make their fried catfish.  Below is my recipe for some delicious Hush Puppies that are made with cornmeal, flour, salt, garlic powder, sugar, onion, egg and buttermilk.


Ingredients:

1 1/2 cups of white cornmeal
1/2 cup of all purpose flour
1 1/2 teaspoons of baking powder
1/2 teaspoon of salt
1/2 teaspoon of garlic powder
1 teaspoon of sugar
1 small onion, finely chopped
1 egg
1 cup of buttermilk
Oil for deep frying

Instructions:

You will want to begin this recipe by taking a medium mixing bowl and adding your cornmeal, flour, baking powder, salt, garlic powder and sugar and mix them together with a whisk.  Then add in your onion and mix your ingredients together  Next, take a large mixing bowl and add in your egg, milk and whisk them together.  You will then want to add in your flour mixture a little at a time until they are incorporated and you have a batter

Its now time to deep fry your hush puppies so turn on your deep fryer and heat your oil to 365 degrees F.  When the temperature has reached the proper temperature drop your batter into the deep fryer a teaspoon at a time and fry until they are golden brown, turning the hushpuppies during the cooking process.  You will have to work in batches.  Do not overcrowd your hush puppies in the deep fryer.  You should be able to fry 4 to 6 hush puppies at a time depending upon the size of your deep fryer.  This should take 2 to 2 1/2 minutes per batch.  When finished remove your hush puppies from the oil with a slotted spoon and then let drain on paper towels.  You will want to serve these warm
