Corned Beef Hash Recipe

Below is my recipe for a delicious and flavorful corned beef hash that is made with sautéed onions along with cooked chopped corned beef, potatoes, thyme, oregano, parsley, salt and pepper.  The hash is cooked in a large skillet until its browned and nice and crispy.  This is a great corned beef hash to serve with either poached or fried eggs on top.


Ingredients:

2 tablespoons of butter
1 medium onion, minced
3 cups of chopped, cooked corned beef
3 cups of chopped cooked potatoes
1/2 teaspoon of chopped fresh thyme
1/2 teaspoon of chopped fresh oregano
1/4 teaspoon of freshly ground black pepper
Kosher salt
Chopped fresh parsley

Instructions:

You will want to begin by taking a large skillet and adding in your butter to it and placing your skillet over a medium heat. You should then add in your onions and sauté them until translucent. This should take about 3 minutes. Next, add in your chopped corned beef, potatoes, thyme, oregano and pepper and mix your ingredients together. Then spread them out evenly over the pan and press down on the mixture with a metal spatula. As you do that increase your heat to a high and let your corned beef cook.

You do not want to stir your corned beef hash as it cooks. Simply let them brown. You can use your spatula to take a sneak peak underneath while they cook to see how they are browning. Once nicely browned use your spatula to flip sections of your corned beef until it all has been flipped. You will want to press down on your corned beef once again. Continue to cook as you did the first time. Your corned beef is finished when both sides are nicely browned and its slightly crispy.

When finished stir in your chopped parsley and give your corned beef hash a taste and season with salt and pepper to your taste if needed. I love to serve this with poached eggs and toast for a wonderful and delicious breakfast and even a great dinner.
