Cranberry Nut Bread Recipe

Below is my recipe for making the best cranberry nut bread that you will ever eat and enjoy.  Its moist, flavorful and needs no topping to enjoy. Simply take a knife and slice a piece and enjoy with a glass of milk.  My recipe for making this cranberry nut bread is made with flour, cinnamon, butter, sugar, egg, orange juice, orange zest, cranberries and chopped pecans.


Ingredients:

2 cups of all purpose flour
1/2 teaspoon of baking soda
1 1/2 teaspoon of baking powder
1 teaspoon of cinnamon
1 teaspoon of salt
1/2 cup of butter at room temperature
1 cup of sugar
1 large egg
3/4 cup of orange juice
1  teaspoon of freshly grated orange zest
1 cup of coarsely chopped cranberries
1/3 cup of pecans, chopped

Instructions:

You will want to begin this recipe by lightly greasing a 9 x 5 x 3 inch loaf pan.

Take a medium mixing bowl and add in your flour, baking soda, baking powder, cinnamon, salt and whisk your ingredients together.  Then set your bowl aside until use later.

Now take a large mixing bowl and place in your butter and sugar and cream them together with a hand mixer.  You will want to beat until your ingredients are well mixed and are light and fluffy.  Next, add in your egg and beat until mixed and then add in your orange juice and orange zest and beat until your ingredients are fully incorporated.  To make your batter you will want to add about a cup at a time of your flour mixture into your wet ingredients and mix with your hand mixer until all of your flour is fully incorporated and you have created a batter.  Then add in your pecans and cranberries and fold them into your batter.

Then simply pour your batter into your prepared loaf pan and place your loaf pan in a cold oven.  Now turn the temperature of your oven to 350 degrees F. and bake until golden brown and a toothpick can be inserted into the center and it comes out clean.  This should take 55 to 65 minutes.

Now, remove your loaf pan from your oven and cool for 5 minutes in the pan.  Then remove your cranberry nut bread from your pan and let it cool on a wire rack until completely cooled.  Then slice, serve and enjoy.
