Honey Lime Chicken Recipe

If your anything like me you eat a decent amount of chicken in your diet and coming up with different ways to prepare chicken can be difficult.  Below is my recipe for a delicious Honey Lime Chicken where the chicken is marinated in a marinade of honey, soy sauce, lime, lime zest, ginger and garlic for about 45 minutes before baking in the oven.


Ingredients:

1/2 cup of honey
1/3 cup of soy sauce
1/4 cup of lime juice
1 teaspoon of finely grated lime zest
1 tablespoon of freshly grated ginger
2 garlic cloves, mashed and minced
Kosher salt
8 chicken thighs, bone in

Instructions:

You will want to begin by taking a large bowl and add in your honey, soy sauce, lime juice, lime zest, ginger and garlic and mix your ingredients together with a whisk. You will want to add in a pinch of salt and taste.   Now place your ingredients into a large sealed container along with your chicken and let marinate in the refrigerator for 45 to 60 minutes.

Now preheat your oven to 350 degrees F.

After your chicken has marinated, remove your chicken from your container and then place your thighs skin-side up in a shallow baking dish.  Next, spoon some of your marinade over each thigh.

Now simply place your baking dish into your preheated oven and bake until the thighs read 170 degrees F. on a meat thermometer. This should take 35 to 45 minutes.  The amount of time will depend on the size of your thighs. You will want to serve your honey lime chicken right away.
