Creamed Corn Recipe

Creamed corn is corn cooked in a creamy sauce that is made by melting butter and then adding in some flour to thicken along with some milk and seasonings.  Below is my recipe for some delicious Creamed Corn that is made with corn, onions, butter, flour, half and half, sugar, nutmeg, salt and pepper.


Ingredients:

6 ears of fresh corn
1 tablespoon of butter to sauté the onions
1 small onion, finely chopped
1/4 cup of butter
3 tablespoons of water
1 teaspoon of sugar
1 tablespoon of flour blended with 1 tablespoon of water
1/8 teaspoon of nutmeg
1/2 teaspoon of Kosher salt
1/2 teaspoon of coarsely ground black pepper
3/4 cup of half and half

Instructions:

You will want to stand your corn cob up vertically over a large bowl and then use a large sharp knife to cut your corn kernels off the cob  using long downward strokes.  Then take your same bowl and place your corn cob over the bowl and scrape against the cob to press out the milky liquid into that bowl.  Do this for each corn cob until all of your corn has been removed from your cobs.

Now, take a large skillet and place your butter into it and place it over a medium heat.  When your butter has melted add in your onion and sauté your onion until tender.  This should take about 3 minutes.  Now, stir in your corn and juices from your bowl, water and sugar and mix your ingredients together.  Then cook your ingredients until your corn is tender.

At this point you will want to add in your flour and water mixture, nutmeg, salt, and pepper and mix your ingredients together until blended.    Then slowly add in your half and half, making certain that you stir constantly until finished.  You will want to cook for 2 minutes longer.  It should now be thickened and have the creamy consistency that you want.  Do not let this boil.  You should serve your creamed corn right away.
