Beef Chow Mein Recipe

Beef Chow Mein is a healthy and flavorful Chinese dish that I love to make and eat.  In fact, I love all forms of chow mein.  One mistake that many people make when making Chow Mein is using those horrible hard Chow Mein noodles.  It is much better to use some soft Chinese egg noodles.  Below is my recipe for making a delicious Beef Chow Mein that is made with dried Chinese egg noodles, round steak, carrots, onion, celery, cabbage, green onions, water chestnuts, bean sprouts, soy sauce, sesame oil, oyster sauce and other seasonings and ingredients.


Ingredients:

3/4 pound of round steak
1 tablespoon of soy sauce
1 teaspoon of salt
1 tablespoon of sugar
8 ounces dried Chinese egg noodles
1 teaspoon of toasted sesame oil
1 cup of beef broth
1 tablespoon of cornstarch
1 tablespoon of soy sauce
1 tablespoon of a oyster sauce
2 tablespoon of peanut oil, divided
2 carrots, cut julienne style (like match sticks)
1 medium onion, sliced thin
2 stalks of celery, biased sliced
1/2 of a small Napa cabbage, thinly chopped
6 green onions, sliced lengthwise and cut into 2 inch pieces
1 (8 oz.) can of sliced water chestnuts, rinsed and drained
3/4 cup of bean sprouts

Instructions:

You will want to begin by slicing your beef about 1 inch long, 1/2 of an inch wide and as thin as possible.   Then take a small mixing bowl and add in your salt, sugar and soy sauce and whisk your ingredients together.  Then add your beef into a large re-sealable storage bag along with the marinade that you just made.  Seal your bag and then shake to fully coat your beef.  Then let your beef marinade for at least an hour.

Now, take a medium saucepan and fill it with water and then place it over a medium high heat.  When your water comes to a boil add in your noodles and cook until al dente.  This should take about 3 minutes.  Then place your noodles in a colander, add in your toasted sesame oil and toss your noodles to coat them to prevent them from sticking together.  Then place some foil on top to help keep your noodles warm and set them aside for use later.

You should now mix together your sauce.  To do this, take a mixing bowl and add  in your beef broth, corn starch, soy sauce and oyster sauce and then whisk them together.  Now set it aside for use later.

You should now take your wok or a large skillet and put your 1 tablespoon of your oil in it and then heat your wok on a high heat.  Now drain the beef and get rid of the marinade and add your beef to your wok and stir fry for 4 to 5 minutes making certain all sides get brown.  Then remove your beef from the wok and set aside.  Now, add in 1 tablespoon of oil to the wok and add in your carrot, onion and celery into the wok and stir fry your ingredients for about 2 minutes.  Now add in your cabbage, water chestnuts and bean sprouts and stir fry for an additional 3 minutes.  Now, return your beef to your wok along with your green onions and mix with your vegetables in the wok and stir fry for an additional 2 minutes.  You want your vegetables to be tender but still crisp.  You should now clear the center of your wok by pushing your vegetables and beef up the sides of the wok.  Now give the sauce that you had previously made a quick whisk to make certain it hasn’t separated and then add your sauce to the center of the wok.  You will want to stir your sauce until it has thickened.  When this happens, add your noodles to your wok and then toss all of your ingredients together to fully coat all ingredients.  Now cook and stir and mix your chow mein for about an additional minute to make certain your beef chow mein is fully heated.  Then simply transfer your Beef Chow Mein to a serving platter and enjoy.
