Chocolate Zucchini Bread Recipe

Zucchini bread alone is a magnificent dessert but add some chocolate and its now it‘ even better.  This recipe for making some chocolate zucchini bread will simply blow you away.  Below please find my recipe for making some chocolate zucchini bread that is made with cocoa, cinnamon, nutmeg, orange zest, semi sweet chocolate chips and shredded zucchini.  This recipe will make two loafs since one is never enough.


Ingredients:

2 cups of sugar
1 cup of canola oil
3 eggs
2 teaspoons of vanilla extract
2 1/2 cups of all-purpose flour
1/2 cup of baking cocoa
1 teaspoon of salt
1 teaspoon of baking soda
1/4 teaspoon of baking powder
1 teaspoons of ground cinnamon
1/2 teaspoon of nutmeg
1 tablespoon orange zest
3/4 cup semi sweet chocolate chips
2 cups of shredded peeled zucchini

Instructions:

You will want to begin by preheating your oven to 350 degrees F.

Take a large mixing bowl and add in your sugar, oil, eggs and vanilla and then beat your ingredients together with a hand mixer until well blended.   Take another mixing bowl and add in your flour, cocoa, salt, baking soda, baking powder, cinnamon, nutmeg and orange zest and whisk your ingredients together.  Then slowly add in your dry ingredients, a little at a time, while you beat your ingredients together with your hand mixer.  Continue to beat until all of your ingredients are well blended.  Then fold in your chocolate chips and shredded zucchini into your batter. Now take two 8 x 4 inch loaf pans and give them a quick coating with cooking spray.  Place half of your mixture into the first loaf pan and the rest in the other.  

Now, place your loaf pans into your preheated oven and bake at 350 degrees F for 50 to 55 minutes.  You know your Chocolate Zucchini bread is done when a toothpick inserted near the center comes out clean.  When finished remove from the oven and let cool for at least 15 minutes.  Then remove from the pans and let cool on a wire rack.  Then slice, serve and enjoy.  You can serve your chocolate zucchini bread with a little whipping cream if you like but this is so delicious that it will be perfectly good all by itself.
