Shrimp Creole is a dish that originated in Louisiana and consists of cooked shrimp in a mixture of tomatoes, onion, celery and bell pepper, and is usually spiced with a hot pepper sauce or cayenne pepper and other seasonings and then served over white rice. Below is my recipe for a delicious Shrimp Creole that is made with shrimp, onion, celery, bell pepper, garlic, tomatoes, tomato paste, wine, vegetable broth, Worcestershire sauce, red pepper hot sauce, thyme, cumin and other seasonings.
Ingredients:
2 tablespoons olive oil
1 green bell peppers, chopped
1 medium onion, chopped
2 celery stalks, chopped
2 cloves of garlic, mashed and minced
2 tablespoons cornstarch
1 (14.5 ounce) can stewed tomatoes, crushed when you add them in
1 (8 oz.) can of tomato paste
3/4 cup of a dry white wine
1 cup of vegetable broth
1 tablespoon Worcestershire sauce
1 tablespoon red pepper hot sauce
1 teaspoon chili powder
1 teaspoon of cumin
1/2 teaspoon of thyme
1/8 teaspoon of white pepper
1/4 teaspoon of Kosher salt
1 teaspoon white sugar
1 1/2 pounds of peeled and de-veined shrimp
Green onions, for garnish
Instructions:
You will want to start by taking a 2-quart saucepan and placing your olive oil in it and place it on a medium heat. Once hot add in your onion, celery, green pepper and garlic and cook until tender. Make certain you stir and move around your vegetables while they cook. This should take about 5 minutes.
Once your vegetables are tender mix in your cornstarch. Then stir in your stewed tomatoes, tomato paste, white wine, vegetable broth, Worcestershire sauce, red pepper sauce, chili powder and cumin, thyme, white pepper, salt and sugar. You should bring it to a boil and then add in your shrimp and cook for 5 minutes. Make certain that you stir frequently while it cooks. Serve your shrimp Creole over rice. Then top with chopped green onions.
