Chicken Fingers & Waffle Cut Fries (Chicken n Waffles)

With everyone loving chicken and waffles I though I would do my version of chicken and waffles by making some delicious and spicy chicken fingers for the chicken part of the recipe and substituting some crispy and crunchy waffle cut fries or chips for the waffles.  Below is my recipe for making some delicious and spicy chicken fingers along with some crispy waffle fries (chips).
















Ingredients for Waffle Fries:

3 pounds of Idaho potatoes, peeled
Peanut oil
Sea Salt, to taste

Ingredients for Chicken Fingers:

4 boneless chicken breasts
2 cups of flour
2 eggs
1 tablespoons of milk
1/2 teaspoon of paprika
1 teaspoon of salt
1/4 teaspoon of cayenne
1/4 teaspoon of freshly ground pepper
1/4 teaspoon of garlic powder

Instructions for Making Waffle Fries:

You will want to begin by making your waffle cut fries before you make your chicken fingers.  To cut your waffle cut fries you will need to use the ruffled blade of a mandolin to cut them.  Before you slice your potatoes set your blade so that its 1/16th of an inch thick.  When cutting your potato you should cut them at a 90 degree angle so slice the bottom of the potato at a 90 degree angle.  Then make a single pass along the slicer to make the first cut.  When you do this you will see ridges on the end of your potato.  Discard this first slice.  Then after that first pass make a quarter turn and slice again.  Then simply rotate back and forth as you slice the remainder of your waffle fries.   Then repeat the same procedure with your next potato.  Repeat until all of your potatoes have been cut.  You should place your potato slices in a large bowl of cold water when you finish slicing each potato so that your potatoes do not turn brown before you have a chance to fry them.   This will also get rid of some of the excess starch.

Now,  place enough peanut oil in a 4 to 5 quart cast iron Dutch oven so that it comes halfway up the side of the pot.  Then place your pot over medium-high heat and bring the temperature to 275 degrees F.

Now, working in batches, carefully place your waffle fry cut potato slices into the hot oil and cook until they are golden brown.  Make certain you use a frying skimmer and flip your fries over every 30 seconds as they fry.  Your waffle fries should take 3 to 4 minutes until they are golden brown and crisp.

Place your waffle fries on some paper towels to drain after they are fried and then immediately sprinkle them with your sea salt.   You will now want to make your chicken fingers.  You can place your waffle fries or chips into a oven set at 175 degrees F. to keep warm if you like.


Instructions for Making Chicken Fingers:

To make your chicken fingers you will want to take your boneless chicken breasts and cut them into strips of about 1/2 inch wide and 3 to 4 inches long and then lightly sprinkle both sides of each strip with some salt and pepper.

Now take a medium bowl or pie pan and add the eggs and milk to the bowl and whisk your ingredients together.   Then add 1 cup of flour to a second medium bowl or pie pan and then add 1 cup of flour and all of your seasonings into a third bowl or pie pan and whisk your ingredients together.  Now line your 3 bowls side by side on the counter in front of you.

You now want to coat the chicken strips. To do so, take each chicken strip, one at a time, and place it in the bowl with the flour in it and coat them. After you coat each chicken strip with the flour you will then want to dip it into the second bowl with the egg mixture.  Lastly, dip the chicken strip into the third bowl that has the flour and seasonings in it. You should repeat this process until all of the chicken strips have been coated. The reason for this double dusting is to make a crispy coating once they have been fried.

Now place the chicken tenders in a preheated large skillet that has about 1/2 of an inch of vegetable oil in it, making certain not to crowd them while frying.  You will need to fry them in batches. You will want to fry them until golden brown. The heat should be a medium/high heat and your chicken fingers should fry for about 3 to 4 minutes per side. When your chicken fingers have been fried you will want to place them on a paper towel so that any lingering oil is absorbed.  

Serve your chicken fingers with some blue cheese dressing on the side along with your waffle fries or chips on the for a delicious meal that your family will love.
