A hollandaise sauce is basically an emulsion of egg yolks and melted butter and it is usually seasoned with some lemon juice, salt and often times some cayenne pepper. White pepper can also be added in but I prefer not to use it. The flavor of a good hollandaise sauce should be rich, buttery and have just a slight tang from the lemon and cayenne. Below is my recipe for a delicious hollandaise sauce that is made with egg yolks, butter, lemon juice, salt and a bit of cayenne.
Ingredients:
1/2 cup of butter
2 large egg yolks, beaten
2 tablespoons of lemon juice
1/4 teaspoon of Kosher salt
1 pinch of cayenne pepper
Instructions:
To make your hollandaise sauce you will want to melt your butter in a double boiler over simmering water. Once your butter has melted you will want to slowly add in your beaten egg yolks and whisk vigorously. Once your eggs have been added in you should then gradually add in your lemon juice as you continue to vigorously whisk your sauce. You will want to continue cooking and whisking your sauce until your sauce thickens and doubles in volume. Once this happens you should season your hollandaise sauce with your salt and cayenne pepper. If the sauce gets too thick you can add just a bit of water to get it to the creamy consistency that you want.
