Ingredients:
1 pound of flank steak
1 tablespoon of soy sauce
1 tablespoon of rice wine
2 tablespoons of water
1 garlic clove, minced
1 tablespoon of cornstarch
2 1/2 tablespoons of oyster sauce
1 tablespoon of soy sauce
1 1/2 tablespoons of rice wine
1 tablespoon of water
1 tablespoon of cornstarch
6 tablespoons of Peanut oil, divided
3 cloves of garlic, minced
1 teaspoon of fresh ginger, minced
1 pound of broccoli, cut into florets
1/2 cup of water
1/4 teaspoon of salt
1/2 teaspoon of sugar
Instructions:
You will want to begin by slicing your flank steak across the grain into very thin slices. When this is done you will want to make the marinade for your beef. To do this take a medium mixing bowl and add in your soy sauce, rice wine, water, garlic and cornstarch and whisk your ingredients together. Then add in your beef to the bowl and toss well to coat your beef. Now place the bowl in your refrigerator and let your beef marinate for 30 minutes to an hour.
After your meat has marinated you will want to make your cooking sauce. To do this take a small mixing bowl and add in your oyster sauce, soy sauce, rice wine, water and cornstarch and whisk your ingredients together. Your sauce will most likely separate a bit before you get around to using it so be prepared to give it another whisk before you actually use it in your recipe.
Now, take your wok and place 1 tablespoon of your oil into it and then place your wok over a medium high heat. When the oil just barely begins to smoke add in half of the beef and let the wok sear the meat before you begin to move and stir fry your beef. This should take about a minute. Then start moving around your beef and cook and stir fry your beef for about another minute or two. You want your beef to be browned on all sides but not over cooked. Now remove your beef from the wok and transfer it to a bowl. Then add in another tablespoon of your oil and cook your remaining beef as you did before. Now remove your beef from the wok and place your beef in your bowl and set aside. Next, wipe out and clean your wok with paper towels.
You will now want to add in 2 tablespoons oil to your wok and place your wok back over a medium high heat. When the oil is hot, add in your garlic and ginger and stir fry until aromatic. This should only take about 30 seconds. Now add in your broccoli, sprinkle your salt and sugar over the broccoli and then stir fry for about a minute. Reduce your heat slightly when stir frying your broccoli so it doesn’t burn. Then add in your water, cover your wok and then let your broccoli steams for 4 to 5 minutes. You want your broccoli to be a bright green, but still be somewhat crisp. Then remove your broccoli from your wok, remove the remaining water from the wok and once again wipe and clean your wok with paper towels.
You then want to add in 2 more tablespoons of your oil, place your wok over a medium high heat and then return your beef and broccoli to your wok and mix and stir fry for about a minute. Now create a well in the middle of your wok by pushing your broccoli and beef up the sides of the wok so that it’s empty in the center of your wok. Then give the oyster sauce that you previously made a quick whisk to combine and pour your sauce into the well and stir the sauce quickly until it thickens. When your sauce has thickened mix all of your ingredients into the sauce and stir and mix until all of your beef and broccoli has been coated. I like to serve my Beef and Broccoli over steamed rice.
