Bourbon Balls Recipe

Candy isn’t always the easiest for me to make but this recipe for bourbon balls is extremely easy to make and it’s a recipe that is hard to get wrong.  Since we are using bourbon that does not have the alcohol cooked away its probably best to limit this treat to the adults, although there isn’t much bourbon added to the treat. 


Ingredients:

1 cup of fine vanilla wafer crumbs
1 cup of  pecans, finely chopped
1 cup of confectioners' sugar
1 teaspoon of ground cinnamon
1/2 teaspoon of ground ginger
2 tablespoons of unsweetened cocoa powder
1/4 cup of bourbon
1 tablespoons plus 1 1/2 teaspoons of light corn syrup
1 cup of confectioners' sugar, sifted

Instructions:

You will want to take a medium mixing bowl and then add in your vanilla wafer crumbs, chopped pecans, 1 cup of confectioners' sugar, cinnamon, ginger and cocoa powder.

Now take another medium mixing bowl and add in your bourbon and corn syrup and mix them together.  Now stir in your dry ingredients that you have in your first mixing bowl and thoroughly mix them together.  Cover your bowl and then place it into the refrigerator and chill for at least 2 hours.

You now want to sift about 1 cup of confectioners’ sugar on a cookie sheet.  This will be used to roll your bourbon balls in.  Now take small bits of your dough and shape them into balls of about 3/4 of an inch wide and then roll them in the confectioners’ sugar.  Continue doing this until you have used up all of your dough.  This recipe should make about 3 dozen bourbon balls.  Once your bourbon balls are finished place them in an  airtight container and store them in the refrigerator. They are better after they have rested in the refrigerator a few days so make them a few days ahead to get the best flavor.
