Cilantro-lime rice is a Mexican dish that is just incredible. The fresh flavor of the cilantro pairs beautifully with the lime and adding it to your rice just creates the perfect rice dish. Below is my recipe for a delicious Cilantro-Lime Rice that is made with rice, vegetable broth, lime juice, onion, garlic, cilantro and lime zest.
Ingredients:
1 3/4 cups of vegetable broth
2 tablespoons of fresh lime juice
1/2 teaspoons of salt
1 cup of long grain rice
2 tablespoon of olive oil
1 small sweet onion, diced
2 garlic cloves, minced
1/2 cup of fresh cilantro, finely minced
1 teaspoon of lime zest
Instructions:
Pour your vegetable broth and lime juice into a large saucepan with a tight-fitting lid. Bring your broth to a boil over a medium high heat and then add in your salt and rice to the broth. Now, give your rice a quick stir, reduce your heat to low and then place your lid on your saucepan and let simmer covered for 18 minutes. After 18 minutes remove your rice from the burner, fluff your rice with a fork and then return your lid to the saucepan and let sit for 5 minutes.
At the same time that you are cooking your rice take a skillet and add in your oil. Then place your skillet over a medium high heat and add in your onion and sauté for 4 minutes, making certain to move around your onions as they cook. Then add in your garlic and sauté for an additional minute. Now remove your onions and garlic from the heat and set them aside.
When your rice has sat for 5 minutes, remove your lid, add in your onions, garlic over top of your rice making certain to also include any left over olive oil in your skillet. The oil will add a bit of richness to your dish. You should also add in your fresh cilantro and lime zest and then stir your ingredients into your rice. Serve your cilantro-lime rice immediately.
