Green Chile Cornbread Recipe

I have always loved cornbread but add some green chiles, sautéed onions, corn and a sharp cheddar cheese and you now have a much heartier cornbread and it is even better.  Below please find my recipe for making  a delicious green chili cornbread that is made with cornmeal, flour, butter, eggs, sour cream, milk, garlic, onion, green chiles, corn and sharp cheddar cheese.


Ingredients:

1 cup of yellow cornmeal
1 cup of all purpose flour
1 1/2 teaspoons of salt
2 teaspoons of baking powder
1 teaspoon of baking soda
1/2 cup of softened unsalted butter
1/4 cup of sugar
1/2 cup of sour cream
2 eggs
1 3/4 cups of milk
1/4 teaspoon of hot pepper sauce
1 (4 oz.) cans of diced green chiles (fire roasted would be best), drained
1 cup of frozen corn
1 cup shredded extra sharp cheddar cheese (4 ounces)
1 tablespoon of butter
1/2 cup chopped onion
2 cloves garlic, finely chopped

Instructions:

You should start by preheating your oven to 450 degrees F.

Take a large mixing bowl and add in your cornmeal, flour, salt, baking powder and baking soda and whisk your ingredients together.   Now take a second large mixing bowl and add in your softened butter and sugar and beat them together with a hand mixer.  Then add in your sour cream and eggs to the butter and sugar mixture  and continue to beat until your ingredients are mixed together.   You now want to add in your dry ingredients from the other bowl and your milk into your mixture making certain to alternate back and forth between the dry ingredients and the milk until all of your dry and all of your milk have been added in.   Now add your green chiles, corn and shredded cheese into the mixture and simply fold them into your batter.

Now, take a 10 inch cast iron pan, place your butter into it and then place it on medium-high heat. Add in your onion and sauté until the onions are tender.  This should take about 3 minutes.  Then add in your garlic, stir and then sauté another minute.   Now turn off your burner and add in your onion and garlic mixture into your batter and mix together.   Next, pour the batter into the cast iron pan and then place your pan into the oven and bake for  about 30 minutes.   You know its  done when its golden brown on top. and a toothpick can be inserted into the center of your cornbread and it comes out clean.

Let your green chile cornbread cool slightly, then slice into squares and serve warm.
